We have a very strong policy of responsibility on ensuring that the food we purchase is as sustainable as possible.
We operate with three key rules for sustainability Where - When - How.
Where something was caught or farmed is very important to understand whether it is in an area where the particular food is deemed to be sustainable and not harming the environment.
When is particularly important for Fish and Seafood to ensure it is both outside of their spawning season and also that the area where they were caught was deemed sustainable at that time.
How is both the method of farming and the method of capture to ensure that methods with the least environmental impact and most sustainable benefits are used.
We will always try to purchase Marine Stewardship Council (MSC) products as these are certified to be sustainable.
We also use the Marine Conservation Society (MCS) lists to understand the current status of any species.
